‘MedMex Grilled Veggie Tacos w Chermoula Sauce

Who couldn’t use more veggies in their lives? These tacos are LEGIT! Filled our Xica Jicama Tortillas – yes, it’s just jicama!
with MedMex seasoned grilled veggies, avocado, spicy Moroccan Chermoula sauce, arugula washed with Eat Cleaner – because you still need to wash that pre-washed stuff again – and a ton of flavor.
Makes 4 servingsChermoula sauce
1 teaspoon ground coriander
1 teaspoon ground cumin
2 garlic cloves
3/4 cup extra-virgin olive oil
1/4 teaspoon finely grated lemon zest
Juice of 1 fresh lemon
1 teaspoon smoked paprika
3/4 teaspoon kosher salt
1/2 teaspoon crushed red pepper flakes
1 cup cilantro leaves, packed
1 cup flat Italian parsley, packedTacos
12 jicama tortillas (find them in the refrigerator section of grocery stores)
1 red onion, sliced into 1’4″ rings
8-10 mini bell peppers
1/2 cup grape tomatoes
Topping: Fresh avocado slices and/or arugulaDirections
1) Blend sauce ingredients in a high-speed blender.
2) Brush bell pepper, onion and tomato with coconut oil. Grill over medium heat or in a grill pan until tender, about 3 minutes on each side.
3) Layer veggies in jicama tortillas. Top with chermoula sauce and optional toppings. YUMMY!
