THAT FAMOUS TIK TOK PASTA DISH DONE ANIMAL-FREE

You know, that famous #tiktok #pasta that everyone has been freaking out about with the tomatoes and feta? Last nights meal, but with a few mods, including an animal-free cream cheese from Perfect Day Foods that made this so creamy and delish, I was BLOWN away at how good the flavor and texture is. Perfect Day developed a way to make delicious dairy products using the world’s first animal-free milk protein, made from fermentation – not cows. Not only is this dish completely animal-free, it reminded all of us of a luscious vodka sauce and was so umami-satisfying.

So delish I didn’t mind getting dunked on by my son (that dunk tho, thru the legs is ridic. My boy got skills). 😜

Tik Tok Pasta made by Chef Mareya        

Serves 6-8

Chef’s note: Wash all produce and herbs with eatCleaner Fruit + Veggie Wash First

Ingredients:

1 box rigatoni pasta (or your favorite shape)- I like Barilla

2 cups baby tomatoes

½ medium red onion, chopped

1 tablespoon fresh rosemary, chopped

1 tablespoon granulated garlic powder

1 teaspoon sea salt or Kosher salt

EVOO

1 tub Perfect Day Foods animal-free cream cheese (or sub plant-based cream cheese)

1 cup reserved pasta water

2 cups fresh spinach

Zest of lemon

Grated dairy-free or plant-based parmesan cheese

 

Directions:

  1. Pre-heat oven to 400F. In a large baking dish, make a ‘wreath’ shape with tomatoes and chopped onion.  Sprinkle rosemary, garlic and salt around the tomatoes and douse with EVOO.  Place cream cheese in the center and give the cheese another sprinkle of oil.  Place in the middle rack of the oven for 40 minutes.  Tomatoes should be caramelized and cheese very soft.
  2. In the meantime, bring a large pot of salted water to a boil to cook pasta until al dente – firm to the bite but well cooked.  Reserve 1 cup of cooked pasta water and drain the rest.  Set aside.
  3. Remove cooked tomato and cheese dish from the oven.  Add reserved pasta water and using an immersion blender, blend until mostly smooth.  Add spinach and stir until spinach wilts.
  4. Add cooked pasta to mixture and toss well.  Over the top, zest fresh lemon and parmesan cheese.  Return back to the oven for 10 minutes and serve hot.  Delish!
