Roasted Brussels Sprouts with Red Bell Pepper and Turkey Bacon
Brussels sprouts are the star of this flavorful dish, and the smoky crispness of turkey bacon, baked to reduce fat and calories but still retain flavor. I use uncured bacon to reduce exposure to harmful chemicals. I also like to cook these in raw coconut oil, which has a higher smoking point than other oils. Make sure to wash all veggies with EAT CLEANER® Fruit and Vegetable Wash before chopping.
Ingredients:
-
2-4 big handfuls of Brussels sprouts.
-
Lo salt and pepper to taste
-
1 package of nitrite-free turkey bacon
-
2 tablespoons of olive oil
Directions:
Preheat oven to 400 degrees
Slice each sprout in half.
Spread all the sprouts out on a baking pan
Toss with olive oil
Shower with coarse salt and fresh cracked pepper
Bake for 30 + minutes until fully roasted and soft in the middle.
While the sprouts are roasting, crisp your turkey bacon in the
microwave between two paper towels, high heat for about 4
minutes.
When the sprouts are done, toss with the bacon and serve.
