1 package P2 Eat Smart Fabulous Fusilli pasta, cooked until al dente, drained
1 Cup grape tomatoes, halved
1 cup broccoli, cut into bite-sized pieces
1 can garbanzo beans, drained (retain liquid)
1/4 cup Greek feta (non-dairy)
1/3 cup fresh basil, chopped
Optional: 2 Tbsp nutritional yeast
Kosher salt and freshly ground black pepper
1 tsp dried oregano
2 Tbsp extra virgin olive oil
1 tablespoon balsamic vinegar
2 Tbsp lemon juice
- Cook pasta in boiling water until al dente.
- In a small bowl, whisk together dressing ingredients
- Combine all remaining ingredients in a serving bowl and serve cold or room temperature.
