When you want some QUICK but CLEAN, these Tomato Basil & Goat Cheese Pitas are just the thing and ready to eat in just 15 minutes!!!

Tomato Basil & Goat Cheese Pitas

 

 

 

 

 

 

 

 

 

 

Ingredients:
8 mini whole grain Pita bread or 4 regular sized pita
2 Cups Cherry tomatoes
½ cup fresh Basil, chopped
8 slices Goat cheese
2 Tbsp nonfat or lowfat feta cheese

Directions: 

  1. Pre-heat oven to 350F.
  2. Place 1/2 cups tomatoes and all of the basil in a food processor with 1 Tbsp water and pulse until a smooth sauce in achieved.
  3. Spread pita with sauce and top with a teaspoon of feta cheese, and evenly distribute shredded mozzarella.
  4. Top each pizza with a few tomatoes and bake for 10-12 minutes, or until cheese is melted and pita is golden.
  5. Garnish with a few pieces of fresh basil before serving.
