So what is one thing that all kids (even some adults) just LOVE???
YEP, you guessed it right! At least, my son, Lucca, goes nuts for them, but what really is a nugget anyways? Do chickens have nuggets?? I don’t think so! That’s why chicken nuggets that you usually find in the stores, typically frozen, are not that good or nutritious for you or your family.
Because my son loves chicken nuggets, I decided to whip up some that are so much better for you, and that Lucca and all kids will still go crazy for. I like to call it The BETTER Chicken Tender!
I like to use Way Better Snacks Sweeet Potato Chips for the crumb/coating around the chicken – these chips taste AMAZING, are nutrient dense, so much better for you than a regular bread crumb, and give the chicken just the right amount of crunch! Way Better Snacks Sweeet Potato chips are GMO-free, gluten-free and loaded with flavor, so there is very little additional seasoning required to make this dish!
I also use all natural / organic chicken thighs for a more tender bite, but feel free to use chicken breast as well. It’s a super simple recipe and fun to make, so get the kids involved and let them help you SHAKE IT UP!!!
Simply, ground up your chips in a food processor, shake it up with your chicken, and bake until crispy (full recipe below). You can even double your batch and freeze some for later, but rest assure that when you pull them out again to make, you know that these chicken tenders are homemade from all natural ingredients, with the right nutrients and the best flavor for the whole family to enjoy!
To mix it up and serve to all ages, pair it with a homemade BBQ or even a Greek Yogurt dipping sauce!!

WAY BETTER Chicken and Sweet Potato Tenders
This is the perfect alternative to store bought chicken nuggets…because who ever saw a nugget on a chicken? Plus, they freeze beautifully so you can bake them up anytime and take minutes to make! The secret ingredient? Way Better Snacks Sweet Potato Chips make the delicious, nutrient dense crumb. Kids of all ages eat these up like crazy.
2 eggs, beaten
½ teaspoon Himalayan sea salt
½ teaspoon white pepper
2 lbs Natural or Organic boneless chicken thighs or breasts, chopped into 2” pieces
Nonstick cooking spray
Other tools: A plastic sealable bag
To dip: Your favorite bbq sauce (make it low sugar, please!) or yogurt dipping sauce (Combine ½ cup nonfat Greek yogurt and juice of ½ lemon)
- In a food processor, process sweet potato chips down to a fine crumb. If you don’t have a food processor, pound chips with a mallet until fine. Pour sweet potato chip crumbs into plastic bag.
- In a medium bowl, add beaten eggs and season with sea salt and white pepper. Place cut-up chicken in egg mixture; remove and shake off excess egg. Add to crumbs in plastic bag and shake until well coated.
- Transfer coated chicken pieces to an oiled baking pan or cookie sheet and bake for 10 minutes on each side, 400F. You can also pan fry pieces in 1 tablespoon raw coconut oil or grapeseed oil. Serve with dipping sauce(s) and enjoy!
Hint: Make a double batch and freeze the rest for the next time!
