Apple Spice Fit Bites

Oh Fall, one of my favorites times of year…temperatures are beginning to cool down, leaves are starting to brown and apples, pumpkins, and cinnamon spice are everywhere!! While this is a beautiful time of year, it’s also more common that the sweets come out and temptations arise in the kitchen.

I wanted to treat you to a delicious snack that is so easy to make, tasty to eat, and too good for you!!

These Apple Spice Fit Bites are amazing!!! Try them for yourself!

Apple Spice Fit Bites

Recipe makes about 16-20 ‘truffles’

Fit Bites Ingredients:

1 1/2 cups quick cook oats
1 scoop low sugar vanilla protein powder (if vanilla chai spice is available, that’s a great choice)
2 teaspoons stevia (liquid or powder)
1 tsp. ground cinnamon
1/4 tsp ground nutmeg
A few tablespoons of hot water
1/4 fuji or honey crisp apple, cleaned and finely diced
1/4 cup slivered almonds

Topping Ingredients:

2 tablespoons granulated stevia
1/2 teaspoon cinnamon

Directions:

1) In a medium mixing bowl, combine oats, protein powder, stevia, cinnamon and nutmeg. Taking a a tablespoon of water at a time, mix ingredients until a ‘dough’ like consistency is achieved and a ball can be formed. If you add too much water at once, it will get too soupy.

2) Allow mixture to cool slightly. Add apples and almonds and incorporate evenly into dough mixture.

3) Freeze mixture for about 15 minutes. Roll into 1″ balls.

4) Combine topping ingredients in a bowl and roll each fit bite until evenly coated. Freeze extras in an air-tight container for grab-and-go snacks, clean desserts and pre/post workouts.
