Protein pancakes with Fresh Blueberries


The only question is with dark chocolate shavings or without.🍫🥞🍫🥞🍫

These protein pancakes are so light and airy inside because of @perfectdayfoods animal-free cream cheese and have a nice bit of crisp on the outside to hold up to all those stewed berries and coconut whip. 🥳When you do it like this, you don’t need syrup or butter, either.

Makes 18 pancakes (3-4” size)

2 cups unsweetened oat milk
1/2 cup coconut flour
3/4 cup AP gluten-free flour
1 cup dairy-free cream cheese
1 teaspoon baking soda
2 whole eggs
2 scoops vanilla collagen protein powder
2 tablespoons pure coconut oil
1 teaspoon vanilla extract

2 cups fresh blueberries washed with @eatcleaner tossed with
1 1/2 teaspoons AP gluten-free flour
Dollop of coconut whip
Optional: dark chocolate shavings.

Place blueberries in a saucepan with 1/2 cup water and cook over low heat for 20 minutes. In the meantime, heat griddle over medium and spray with nonstick avocado oil spray. Blend ingredients in @tribestlife blender until smooth. Pour into even rounds and cook until batter forms bubbles throughout, about 1-2 min. Flip and repeat and eat! 🥞🌑🥞🤍🥞🤍
