Umami Lemon Chicken

I have an obsession with lemon. it’s this incredible little fruit that comes with a big personality…bright, spunky and sure to put a pucker on your lips when it needs to. It adds the perfect acidity to sweetness and balances out fat like a diplomat. The smell of grated zest is enough to lift anyone out of a bad mood and that fragrant oil finishes a dish with just the right hint. That perfect accessory, a color splash on that sexy black dress.

 

Ok, maybe that’s a little too much.

 

Let’s get back to this chicken dish. And I want to explain the term ‘umami’ if you’re not familiar with it.

 

I’m like you. I don’t ever have time to cook and I’m almost always fashionably late to the party, if you know what I mean. That’s why this Umami Lemon Chicken is so great. It comes together in literally 15 minutes, and that’s largely due to how you handle the chicken.

 

Pound that protein.

 

By that, I mean pound it with a mallet. By flattening your chicken and making it thin so that it cooks faster. It’s a simple trick and it works like a charm. But the key with that is keeping it moist. Hold onto that thought.

 

I mentioned the term ‘umami’. Just like bitter, sweet, sour and salty, umami describes a flavor profile that rounds all of these out, linked to the amino acid glutamate, and is often described as ‘meaty.’ I would call it ‘perfectly balanced’ because it really encompasses a little of all the flavors.

 

Trader Joe’s has managed to package this in a paste, which completely intrigued me and of course, I had to try it.

Umami paste from Trader Joe’s adds great depth to this Lemon Chicken.

 

And into this sauce it went. I find that it balances the tartness of the lemon beautifully and adds a rich depth to this sauce that is pretty special.

 

So that’s the secret ingredient. Umami paste. Plus, our Eat Cleaner Seafood & Poultry Wash.

 

The key to keeping the chicken moist is misting it with our magical wash. I’m telling you, it’s a miracle. It helps to seal in the juices and your chicken will cook faster. The fruit acids help to tenderize your chicken and voila, you get juicy, delicious breasts every time.

 

This dish comes together so quickly, you won’t believe dinner is ready in 15 minutes!

Umami Lemon Chicken (paleo, gluten-free)

Serves 4

 

INGREDIENTS:

2 tablespoons ghee (clarified butter)

1/4 cup coconut flour

3/4 cup lemon juice

2 teaspoons Trader Joe’s Umami Paste

1/2 teaspoon black pepper

1/4 teaspoon pink Himalayan sea salt

4 Chicken breasts, pounded to about 1/4″ thin with a mallet, sprayed with Eat Cleaner Seafood & Poultry Wash on both sides

Zest from 1 lemon

 

DIRECTIONS:

  1. In a saucepan over medium heat, melt ghee. Add coconut flour and whisk into ghee until well incorporated.
  2. Add lemon juice and whisk again until smooth. Add Umami paste, zest, black pepper and salt. Allow sauce to thicken over medium heat, about 5 minutes. Take care not to let mixture overflow.
  3. Spray a large skillet with non-stick cooking spray. Cook chicken on both sides for about 6 minutes per side. After chicken is turned, pour lemon sauce over the top of breasts and allow to simmer in sauce for a few minutes. Finish with lemon zest before serving.
