Pumpkin N' Chai Spice Protein Power Truffles

I’m always trying different ideas for making food as ‘dense’ as possible – meaning nutrient dense. If you’ve hung out around my blog or me for a minute, you’ll know this is a huge mantra of mine. How can you pack as many nutrients into a bite as possible? Bulk them up with the good stuff – antioxidants, protein, EFA’s and make ‘em tasty.

I created a recipe for “No-Bake Fit Bites” a while ago – my answer to expensive energy bars. They’re a great way to fuel up before or after a workout, as a light breakfast or treat and they’re power packed with old fashioned oats (you can use gluten-free), protein powder, dark chocolate chips and a bunch of other yummy ingredients.

Now that fall is upon us and my pumpkin obsession is in full gear, these little babies got a new filling.

These are POWER-PACKED with protein, probiotics, antioxidants, enzymes, essential fatty acids, minerals, vitamins and basically the kitchen sink full of nutrients with the boost of pumpkin and Vega All-in-One Nutritional Powder. The Vanilla Chai flavor gives it a festive punch for fall, too. They’re the easiest things in the world to make, practical enough for a grab n’ go snack or elegant enough to be served as a clean dessert at a dinner party, and are great left in the freezer for when you need them. I packed up a dozen for one of my team members on his 8-hour trip up to the Bay Area and they were g-o-n-e way before he arrived. That’s just how good they are, and now he’s asked me to share the recipe with him and all of you, so here we gooooo!

 

Pumpkin N’ Chai Spice Protein Power Truffles

Vegan/ Gluten-Free/ Raw/ Clean

Ingredients:

1 1/2 cups old-fashioned or gluten-free oats

1 scoop Vega All-in-One Vanilla Chai Nutritional Shake (tons of micronutrients plus dairy, gluten and soy-free, no sugar added)

1 Tablespoon unsweetened cocoa powder

2 teaspoons organic stevia (liquid or powder)

1 cup unsweetened canned pumpkin

1 tsp. pure vanilla extract

 

 

 

Toppings To Roll ‘Truffles’ In:

Crushed walnuts

Slivered almonds

Unsweetened shredded coconut

Unsweetened cocoa powder

Unsweetened rice crisps

 

Directions:

1) In a medium mixing bowl, combine all dry ingredients.

2) In a separate small bowl, combine pumpkin, stevia extract (if liquid – if powder or granulated, add to dry ingredients) and pure vanilla extract. Add to dry ingredients and mix thoroughly until well incorporated.

3) Freeze mixture for about 30 minutes. Roll into 1 1/2″ balls, and press into desired toppings to create an even coated like in the picture above. Freeze extras in an air-tight container for grab-and-go snacks, clean desserts and pre/post workouts.

Makes about 16-20 ‘truffles’.
