Protein Power Muffins
Ingredients:
1???????? and 3/4 cup gluten-free all purpose flour
2 scoops protein powder
1/4 cup honey
1/4 cup organic stevia
1 teaspoon baking soda
1 teaspoon salt
2 teaspoon cinnamon
1/2 cup olive oil
1 very ripe banana
1 egg plus 2 egg whites
2 cups unsweetened almond or coconut milk
1 teaspoon pure vanilla extract
1/4 cup dark chocolate chips

- ????????????????????????????????????????????????????????????????????????????????????????????????????????????????????????????????????????Preheat oven to 350 F.
- In a large mixing bowl, combine all of the dry ingredients with a spoon.
- In a separate bowl, beat together all of the remaining ingredients, except for the chocolate chips until smooth with a whisk or hand mixer.
- Add wet ingredients to dry and combine with whisk until smooth.
- Add in chocolate chips and stir, so evenly distributed.
- Mist a muffin pan with a nonstick cooking spray and fill 3/4 of the way full.
- Cook for about 10-12 minutes or until toothpick comes out clean.
