KIWANO MELON & MANGO SALSA on National Mango Day

This delicious mango salsa
would be enjoyable on any
tacos or just about any
fresh, Mexican-themed dish.

Some of the endless options of
foods it goes very well with is chips,
guacamole & black bean tacos.

You can also add it on top & serve it
on a salad or just eat it straight out
of the bowl as a salad because
it is that good.

Mango, Tomato and Kiwano Melon Fruit Salsa
– Makes 6-8 servings (unless you’re a teenager and it’s more like 2)

Ingredients

  • 1 ripe mango, peeled, pitted, and diced

  • 1 medium heirloom tomato, finely chopped

  • 1 kiwano melon, cut in half, seeds scooped out (yields about 3 tablespoons)

  • ½ medium white onion, finely chopped

  • 1 small jalapeño, halved, seeded, and minced

  • 2 garlic cloves, finely minced

  • 1 fresh lime, juice plus ½ teaspoon grated zest

  • 1 teaspoon balsamic vinegar

  • ½ teaspoon chili powder

  • ½ teaspoon Himalayan pink salt

Directions
To prepare the salsa:

  1. Wash all produce with @eatcleanerproducewash.

  2. In a mixing bowl, combine the mango, tomato, kiwano melon seeds, onion, jalapeño, garlic, lime juice, zest, balsamic, chili powder and salt. Toss to mix the ingredients together.

  3. Refrigerate for at least 1 hour to allow the flavors to come together; up to 24 hours.

  4. Serve with your favorite Mexican fare or grilled seafood. Delish!
