Fava Bean Veggie Burger with Spicy Sambal Ketchup

I don’t think you understand how SERIOUS I took this assignment.

This week is #nationalsandwichday and #worldveganday, so your girl here isn’t showing up with some limp biscuit of a square. I was after the perfect plant-based burger that would hold up to any steakhouse standards.

This baby is double stacked and racked UP! 👀

I went to work on this recipe and produced what I think is a forking good replacement for store-bought veggie burgers using fava beans.  Yes, the ‘ful mudammas’ that Egyptians have been eating for literally thousands of years are the perfect umami bean for this handful.

Because if you want a satisfying veggie burger for carnivores, you better come up with the goods!

It’s also got other umami-licious ingredients in the burger blend like cremini mushrooms, sundried tomato, lots of garlic, and seasonings and then topped this baby with all the fixings including grilled onions (my fave) and grilled portobello mushrooms (also my fave). But the ‘secret sauce is the spicy ketchup I made with Serious Foodie Indonesian Sambal Hot Sauce. It’s the perfect hint of sweetness, fire, and acid with red chiles, lime juice, vinegar, and a little hint of ginger. And you’ve gotta have some on the side for extra dipping. 

I’m taking you on an armchair trip around the world with this one!

I predict this is going to be your new ‘go-to’ sauce that you say, I put that ‘‘ish on everything.’

Fava Bean Veggie Burger with Spicy Sambal Ketchup

Veggie Burger Patties

Ingredients: 

  • 2 ½ Cups cooked fava beans (best to soak these overnight and cook until al dente)
  • 1 cup Cremini mushrooms, washed with eatCleaner, and roughly chopped
  • ½ white onion, chopped
  • ½ cup breadcrumbs
  • 2 Tbsp EVOO
  • 2 Tbsp sundried tomato, chopped
  • 2 Tbsp fresh cilantro, washed with eatCleaner, and chopped
  • 1 1/2 Tbsp Serious Foodie Indonesian Sambal Hot Sauce
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper

Spicy Sambal Ketchup

Ingredients:

  • ½ cup tomato paste
  • 2 tablespoon apple cider vinegar
  • 1 ½ tablespoon Serious Foodie Indonesian Sambal Hot Sauce (add more if you like it spicy!)
  • 1 ½  tablespoon EVOO

Directions:

  1. Preheat oven to 400F.
  2. In a food processor, pulse fava beans until they just start to break down, about 10 seconds.  Add mushrooms, onion, breadcrumbs, EVOO, sundried tomato, cilantro, Serious Food Hot Sauce, and salt and pepper and pulse until all ingredients are well incorporated but there’s still texture to the mixture.
  3. Portion mixture into 6 evenly-sized patties and place on a lined baking sheet.  Bake in the middle rack for 30 minutes, then flip to the other side and cook for another 10-12 minutes making sure texture is nice and firm.  Patties will continue to firm as they cool
  4. While patties cook, mix Spicy Sambal ketchup in a small bowl.  Build your burger with your favorite fixings and top with spicy ketchup.  Make an extra batch of ketchup and store it in a squeeze bottle for up to 2 weeks.
