Crunchy Zoodle Salad with Spicy Peanut Dressing

Take it from me, when it comes to eating, I like to try new things and experiment with different foods to see how I can make the most well balanced and nutritious meals, that taste amazing and get the whole family excited. One of my favorite things is making ZOODLES (zucchini noodles) with a handheld spiralizer that I bought off Amazon for about $10. Seriously, this little gadget can open up an entirely new world of good-for-you food; you will have fun making it and enjoy that your kids will LOVE eating their vegetables. AND, to mix it up even more, I made a Crunchy Zoodle Salad with a Spicy Peanut Dressing*!

(*You can always modify the amount of “spicy” in your dressing based on personal preference.)

There are a few reasons why I LOVE this recipe…

  1. It’s fresh, it’s green, and it’s nutritious!
  2. It’s gluten-free, it’s vegan, and it’s well balanced!
  3. It’s ready in under 15 minutes!
  4. You would probably never guess where I get my “CRUNCH” from…sprouted grain, tortilla chips from Way Better Snacks.

These chips are seriously the best thing since sliced bread (and I don’t even eat sliced bread!!!) They are gluten-free, sprouted grain and WAY BETTER (no pun intended :)) than the other commonly known brand of chips or even those crunchy, noodle things that come on top of most other salads. The Sweet Potato flavor is just right for the added crunch and pairs so nicely with the lime that we are going to use in this tasty salad!

So next time you are in a rut in the kitchen and not sure what to make, try this recipe for yourself and tell me you don’t just LOVE everything about it!


Crunchy Zoodle Salad with Spicy Peanut Dressing
Crunchy Zoodle Salad with Way Better Snacks
Serves 4
Salad Ingredients:
4 medium Zucchini
1 Cup Way Better Sweet Potato Tortilla Chips
1/2 Cup shelled Edamame
2 Tablespoons chopped fresh Cilantro
Dressing Ingredients:
4 Tablespoons Tablespoons smooth natural Peanut Butter
1/4 Cup Rice Wine Vinegar
2 Tablespoons low sodium Soy Sauce
1 Tablespoon Sesame Oil
2 teaspoons Red Chili Sauce
Directions:

1) Clean produce with Eat Cleaner Fruit + Vegetable Wash.

2) Make zucchini noodles with handheld or tabletop spiralizer.
3) In a metal bowl, combine dressing ingredients and whisk until smooth.
4) Chop cilantro finely, set aside.
5) Add Way Better Sweet Potato Chips to bag and pound to a fine crumb. Set aside.
6) In a large bowl, toss zoodles with dressing until well coated.
7) Toss with edamame and cilantro and top with sweet potato chip crumbs. Serve chilled or at room temperature.
