It’s that time of year again, when pumpkins are EVERYWHERE and in EVERYTHING!!! You know it’s pumpkin season when Starbucks officially brings back the famous PSL (Pumpkin Spice Latte)!!
These delicious pumpkin pie parfaits are perfect for the morning but pretty enough for a sweet afternoon or dessert treat, especially when they’re layered in a pretty parfait glass.
Chia Pumpkin Pie Parfaits with
Banana Coconut Whip
Parfait Filling Ingredients:
1 Cup pumpkin puree
¾ Cup nonfat Greek yogurt (or coconut yogurt for dairy-free diets)
2 teaspoons granulated stevia
2 teaspoons chia seeds
1/2 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice
¼ teaspoon pure vanilla extract
Banana Coconut Whip Topping Ingredients:
1 Cup TruWhip or clean whipped cream
1/2 frozen banana
1/2 Cup Your favorite low sugar granola
Optional: 1/4 Cup Toasted pecans and shredded coconut
1) In a bowl, mix together parfait filling ingredients; adjust spices as desired.
2) Whip together whipped cream and frozen banana.
3) Layer pumpkin parfait blend into a glass or mason jar, alternating layers of banana whip low sugar granola. Repeat layers.
4) OPTIONAL: Top with an optional sprinkle of toasted pecans and shredded coconut
