
When it comes to dessert, I used to always be at a loss. I’m not a baker and I didn’t grow up with a mom who baked much except for at the holidays. And those were FULL of sugar, butter and cream and every time I’d eat them, I’d be clutching my stomach and groaning. Too much! So I started exploring alternative ingredients and I’m happy to report, it doesn’t take much to make a delicious, sweet treat without the sugar and refined carbs. This creamy chocolate mousse is so decadent and delish – and the best part is, there’s no white stuff. The bonus is it’s only 5 ingredients! Plus, it’s raw, vegan and gluten-free.
Make an extra batch and freeze it into dessert popsicles. The kids will never know there’s avocado in there – unless you tell them, of course.
Ingredients (Serves 2):
1 large ripe avocado, cut in half, stone removed
1/4 cup raw cocoa powder
1/4 cup unsweetened almond or coconut milk (substitute rice milk for nut allergies)
Directions:
1) Scoop avocado flesh out of skin using a spoon. In a food processor, purée the avocado until smooth.
2) Add remaining ingredients and pulse again until completely blended and smooth.
