Come on a little adventure with me. ✨
Imagine yourself on the island of Santorini, sipping a cold glass of something delicious and taking in the white washed houses punctuated by piercing blue roofs. The warm sun caresses your face and you gas at the unctuous waft of yummyness with a hint of licorice that floats across your nose when this Greek style baked card shows up at your table. You unwrap the parchment paper packet, wrapped like a present, and the steam fills your nose and face with the welcome gift nestled underneath. Delicate cod , garlic, oregano, lemon and ouzo.

Except this is real, and you cooked it. And it only took 30 minutes. Try this tonight!

Greek-Style Baked Cod en Papillote (in parchment)

Ingredients:
  • 2 garlic cloves, crushed
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon fresh oregano leaves, or 1½ teaspoons dried
  • 1½ tablespoons fresh lemon juice
  • ¼ cup ouzo (optional, but trust me, it is amazing)
  • 1 teaspoon Himalayan pink salt
  • 1 teaspoon freshly ground black pepper
  • 1½ lbs wild-caught codfish fillets
  • Nonstick olive or coconut oil cooking spray
  • ½ cup finely chopped red onion
  • 10 kalamata olives, pitted and finely chopped
Directions:
  1. In a large bowl, combine the garlic, olive oil, oregano, lemon juice, ouzo, salt, and pepper. Add the fish, cover, and marinate for at least 1 hour.
  2. Preheat the oven to 350°F. Place one fillet of cod in an 8×8” square of parchment paper and top with olives, chopped onion and chopped Brussels sprouts (get purple ones from @melissasproduce ). Fold parchment from top and sides, sealing down the middle to create a pouch.
  3. Bake for 25 to 30 minutes, until the fish is cooked through and nicely opaque in color. Serve with roasted veggies and Heirloom Tomato Salad from my book.
