
Crunchy Zoodle Salad with Spicy Peanut Dressing
Take it from me, when it comes to eating, I like to try new things and experiment with different foods to see how I can make the most well balanced and nutritious meals, that taste amazing and get the whole family excited. One of my favorite things is making ZOODLES (zucchini noodles) with a handheld spiralizer that I bought off Amazon for about $10. Seriously, this little gadget can open up an entirely new world of good-for-you food; you will have fun making it and enjoy that your kids will LOVE eating their vegetables. AND, to mix it up even more, I made a Crunchy Zoodle Salad with a Spicy Peanut Dressing*!
(*You can always modify the amount of “spicy” in your dressing based on personal preference.)

These chips are seriously the best thing since sliced bread (and I don’t even eat sliced bread!!!) They are gluten-free, sprouted grain and WAY BETTER (no pun intended :)) than the other commonly known brand of chips or even those crunchy, noodle things that come on top of most other salads. The Sweet Potato flavor is just right for the added crunch and pairs so nicely with the lime that we are going to use in this tasty salad!
