Blueberry No Bake Cheesecake Bites

These bars are purple naturally because they’re a gift from God with this amazing sweet potato powder that I used from @bevivafoods that imparts just of subtle flavor but blends beautifully with these stewed blueberries and tangy animal-free cream cheese filling from @perfectdayfoods and just the right sweetness from @spiceology unsalted caramel seasoning. 🍰

Vegan Cheesecake Breakfast Bars
- DIRECTIONS 

Crust:
· 2 cups raw walnuts
· 12 large pitted medjool dates
· 1 1/2 tablespoons melted raw coconut oil
· 2 teaspoons unsalted caramel salt-free Spiceology seasoning

· ½ cup full fat coconut cream
· ½ cup Beviva sweet potato powder
· 2 tbsp pure maple syrup
· 2 teaspoons unsalted caramel salt-free Spiceology seasoning

· 1 tsp vanilla extract
