There’s something about this time of year that puts fear in a lot of people’s hearts. We want to eat everything in sight! From the butter balls to the rum cake to the cookie exchange, there’s temptation at every turn and if you’re a clean food lover, it’s hard to find a bite of sanity.
I’ve got a really simple way to enjoy the perfect bite size cake pop. Everyone loves a little something sweet and portion control is key. Just cut a wedge (like a cake slice) of prepared angel food cake – try and find the low sugar variety if you can – and position onto a cake pop stick or small skewer. Melt dark chocolate – (I love Endangered Species chocolate. If not available, pick a 70% or more cocoa variety) in a double boiler or in a glass bowl on top of a boiling saucepan over low heat so that it doesn’t seize. Dip cake wedges in dark chocolate and top with mini white chocolate chips, shredded coconut, chocolate sprinkles or slivered almonds. It’s a bite of pure pleasure for less than 50 calories!
